Tofu Steak

Tofu Steak (豆腐ステーキ) is pan-fried tofu with a Soy Sauce-based savory sauce. Tofu is mild-flavored bean curd and usually cooked in dishes as one of many side ingredients, but it is the main character of this recipe. Tofu Steak is delicious in a strongly flavored sauce with refreshing spicy grated ginger, and goes very well with Steamed Rice. This dish is a great way to add good protein to your meal that is very healthy and also easy on your budget.

The kind of Tofu to use in Tofu Steak is a little harder than silken Tofu. Silken Tofu, which is very smooth and rather soft, is perfect for Miso Soup, but it may not hold its shape well in the process of cooking here. We recommend medium or firmer Tofu not only for not falling apart but also for having some substance in its texture to stand as a steak. You can of course try different types of Tofu to suit your taste.

The steak sauce can be adjusted to your liking too. If you like a sweeter Teriyaki flavor, add a little sugar to the sauce. If you prefer it to be even lighter fare, skip the cooked sauce altogether and add Ponzu sauce at the table. Would you like a vegetarian dish? No problem. Omit Katsuobushi bonito flakes as a topping and substitute with shredded Roasted Nori seaweed. Tofu is a nutrient rich ingredient and easy-to-find anywhere.   • Slice green onions thinly. Peel and grate ginger root. Set aside.
  • Cut Tofu into 4 pieces. Wrap with layers of paper towels and remove moisture. Coat Tofu with potato starch.
  • Heat a frying pan with oil at medium heat. Put Tofu in the pan, and cook while slowly turning, until all the surfaces are lightly browned.
  • Add Soy Sauce, Sake, Mirin, and water, and cook for a couple of minutes, turning a few times. Reduce the sauce slightly.
  • Top with green onions, ginger, and Katsuobushi. Serve hot.
