Today’s Miso Soup is with Broken Tofu and Nori roasted seaweed. This may be the easiest miso soup we have done yet. Medium hard Tofu is broken apart into chunks by hand, and Nori is also torn by hand. No knives and cutting boards are involved. On top of the nice oceanic aroma of Nori seaweed, toasted sesame seeds give the soup another layer of nice fragrance. And all is done in 10 minutes – that’s not bad at all. Miso Soup with Broken Tofu and Nori

Ingredients
- 4 cups Dashi
- 2 Tbsp sesame seeds
- 1 pkg Tofu 14 oz (400 g)
- 4 Tbsp Miso paste
- 1 sheet Nori roasted seaweed 8" square
Instructions
- Make Dashi broth with Katsuobushi bonito flakes. Or you can use any Dashi according to our Dashi recipe.
- Meanwhile, dry-roast sesame seeds in a frying pan until lightly browned, about 2 minutes.
- Break Tofu into large chunks by hand, and add to Dashi. Cook for a minute.
- Dissolve Miso paste in the soup. Turn off the heat, and add Nori roasted seaweed, tearing into pieces. Sprinkle with sesame seeds just before serving.
