Dried Shiitake Mushroom


Dried Shiitake mushrooms are used in many Nimono (seasoned and boiled vegetables) recipes in Japan. They have a distinctive Shiitake flavor that is stronger than fresh Shiitake mushrooms.  They need to be hydrated with water before use, and you can get a flavorful liquid from the hydration which can be used as Dashi in some recipes.
