Cheese Hamburger Steak (チーズハンバーグ) is Japanese Hamburger Steak (or Hamburg Steak) with sweet and tangy sauce and cheese on top. Melted cheese adds another layer of flavor and texture to the sauce, and a lot of people enjoy it whether they are eating at restaurants or at home.
Japanese Hamburger Steak is not exactly an American hamburger which is between buns, but it is more like meatloaf in the US. Starting with ground meat (typically half pork and half beef), you mix in Panko bread crumbs and eggs, so it is light and soft enough to eat with chopsticks. Hamburger Steak doesn’t seem like a very traditional Japanese food, but it is at this point, since it’s been widely eaten by virtually everyone in Japan. Because Hamburger Steak is almost a Japanese national food, there are a lot of variations. Cheese Hamburger is one of the top arrangements of all. With Japanese people’s love for melting cheese on anything, they may think Hamburger and cheese are the best combination.
It may be hard to find Japanese melting cheese outside Japan. It’s a kind of processed single-sliced cheese commonly used to melt on and in all sorts of things. If you don’t find it, you may need to choose another mild-flavored melting cheese. We used havarti for this recipe, but cheddar or mozzarella will work well too. It is a very easy and tasty dish, so try it. You may not make Hamburger Steak without cheese any more!

Instructions
- Put Panko in a large bowl, add milk and stir.
- Add meat, egg, salt, and pepper to the Panko mixture, and mix very well.
- Divide the meat into 4 pieces and roll into oval balls. Push down to form flat steaks.
- Heat oil in a frying pan at medium heat. Place the patties in the hot oil, and fry for 4-5 minutes on one side. Flip over and fry for 3-4 minutes covered, until cooked through.
- Meanwhile, mix ketchup and Worcestershire sauce in a bowl. Cut melting cheese into thin squares.
- Uncover the pan, add sake, then ketchup sauce. Stir and coat the steaks with sauce well. Top with cheese, cover, turn off heat, and let cheese melt for a couple of minutes.
