Ham Katsu Sandwich (ハムカツサンド) was known as “Katsu” sandwich in the 70s and 80s in Japan, and it was more thriftily made with ham rather than with Tonkatsu pork or chicken cutlets. Ham Katsu soaked in a savory sauce is a perfect filling by itself for this simple and nostalgic sandwich. without lettuce or cabbage or any condiments.
It is best to use Japanese Shokupan bread, but use any white toast bread if you can’t find Shokupan. The key for the shape of the sandwich is to make a real square after cutting off the edges of bread. Then you can get right triangles when cut in half diagonally. We didn’t add any other filling to show the authentic Ham Katsu sandwich here, but you can add shredded cabbage if you like. At the end of the day, everyone needs to eat more vegetables.
If you are cooking Ham Katsu for dinner, make extra so that you can make Ham Katsu Sandwiches for the next day’s lunch. Or Katsu can be frozen after the step of coating with Panko bread crumbs. It’s not quite as hearty or special as a thick Tonkatsu Sandwich, but the flavor of Ham Katsu Sandwich is so good that it is worth a try, at least once (then you will be hooked).
Ham Katsu Sandwich Recipe

Ingredients
- 1 Tbsp ketchup
- 2 Tbsp Worcestershire sauce
- 2 pieces Ham Katsu
- 4 slices sandwich bread
Instructions
- Mix ketchup and Worcestershire sauce in a plate.
- Coat Ham Katsu with the sauce. Place one Katsu in the middle of a slice of bread. Then cover with another slice of bread. Cut off the bread crust, and cut the bread diagonally to make 2 triangle pieces. Repeat for a second sandwich.
