Hire Katsu is a kind of Tonkatsu pork cutlet using a different cut of pork, tenderloin. Hire (“hee-ray”) means Fillet in Japanese, and smaller tenderloin fillet pieces are breaded and deep-fried to make this dish. Hire Katsu is very tender bite-size fried pork, and it is a popular item at Tonkatsu restaurants in Japan.
Hire Katsu is less fatty than regular Tonkatsu using pork loin with a layer of fat. So you can say that it is a somewhat healthier version of Tonkatsu. Pork tenderloin is a more expensive cut of pork, but it is nothing like beef tenderloin. If you make it at home especially, Hire Katsu is a tasty but reasonable dinner entree. Once the meat is breaded, it can be kept in the freezer for another time. Then deep-fry without thawing.
Hire Katsu is most often eaten with Tonkatsu sauce. Japanese hot mustard is also a good accompaniment for it. If you like Katsu to be a little less greasy, you can top with grated Daikon radish and Soy Sauce instead of Tonkatsu sauce. Ingredients
- 1 lb pork tenderloin
- salt and pepper
- 1-2 egg beaten
- 3/4 cup panko or bread crumbs
- oil for deep frying
- Tonkatsu sauce
Instructions
- Cut meat into 1″-1 1/2″ thick pieces. Sprinkle salt and pepper.
- Coat the meat with flour, dip in egg, then cover with bread crumbs.
- Heat deep frying oil to 350 F (180 C), and deep fry crumb-covered meat.
- Fry until the color turns golden brown and the meat floats in the oil, about 5 minutes, turning once or twice.
- Set the meat on a cooling rack for a minute. Serve with Tonkatsu sauce and Japanese mustard if you like.
