Before frying, the seasoned wings are coated with Katakuriko potato starch instead of flour because the outer layer gets crispier. If you don’t have potato starch, try corn starch. Salt and pepper topping add extra saltiness which is really nice, but if you’re watching salt intake, you can omit the topping since the chicken has already been marinated with soy sauce. Karaage Chicken Wing

Ingredients
- 1 lb chicken wings
- 1/2 tsp salt
- 1 tsp Soy Sauce
- 1 Tbsp Sake
- 1 Tbsp sesame oil
- 1 tsp ginger root grated
- 1 tsp garlic grated
- 1/4 cup Katakuriko potato starch
- deep-frying oil
Topping
- 1 tsp salt
- 1/8 tsp black pepper
Instructions
- Pat chicken wings dry with a paper towel. In a large bowl, mix chicken and all the seasonings, except Katakuriko. Rub the wings well with the seasonings. Let sit for 30 minutes.
- Mix topping ingredients in a small bowl. Set aside.
- Gently remove any excess moisture from wings using paper towel. Coat chicken lightly with potato starch.
- Heat deep-frying oil at medium high heat. Cook chicken wings until cooked through and golden brown. Remove from oil and sprinkle with the topping right away.
