Today’s miso soup is made with bacon, cabbage, and onion. Bacon is commonly used in western style soup such as chowder and minestrone, but it actually goes very well with Japanese miso soup, too! Dashi is almost not needed as the bacon has strong flavor, but we are adding instant dashi powder to the broth for added umami.
Miso Soup with Bacon, Cabbage, and Onion

Ingredients
- 1/2 onion
- 1/4 – 1/3 cabbage
- 4 slices bacon thick cut
- 4 cups water
- 2 tsp instant dashi powder
- 4-5 tbsp Miso paste
Instructions
- Slice onion thinly, and cut cabbage into bite size pieces. Cut bacon thinly.
- Heat a medium size pot and saute bacon at medium heat for a few minutes. Remove oil with a paper towel.
- Add onion, cabbage, water, and instant dashi powder. Cover and bring to a boil. Reduce heat and simmer for 5 minutes.
- Add the miso paste and turn off the heat.
