Today’s miso soup is made with Chikuwa and Wakame seaweed. Chikuwa is a Japanese fish cake that is made from white fish paste called surimi. Chikuwa is easily found at Japanese markets, and it is inexpensive. This is a quick and easy miso soup that takes minimum time and effort to cook.
Miso Soup with Chikuwa and Wakame

Ingredients
- 4 cups Dashi
- 4-5 Chikuwa
- 2 green onions
- 4-5 Tbsp miso paste
- 1 Tbsp wakame seaweed
Instructions
- Make Dashi broth according to Dashi recipe. Or you can use an instant Dashi.
- Cut Chikuwa diagonally into 1/2 inch thick. Cut green onions thinly.
- Cook Chikuwa and green onions in simmered dashi for 1 minute. Turn off the heat and dissolve miso paste in the soup. Add the dried wakame seaweed right before serving.
