Today’s miso soup is made with daikon radish and fried tofu (Atsuage). Thickly cut fried tofu called Atsuage is easily found at markets in Japan, and it adds both texture and richness to the soup. If it’s not possible to find it, you can also use regular tofu.

Miso Soup with Daikon and Fried Tofu

Ingredients
- 4 cups Dashi
- 4 " long daikon radish
- 3-4 pieces fried tofu (Atsuage)
- 4-5 tbsp miso paste
Instructions
- Cut daikon radish into matchsticks. Cut the fired tofu into bite size pieces.
- Make Dashi broth according to Dashi recipe. Or you can use an instant Dashi.
- Cook daikon and fried tofu in the Dashi, covered for 5 minutes or until the daikon is soft.
- Dissolve Miso Paste in the soup and stir.
