Today’s miso soup is made with pea sprouts and eggs. Pea sprouts (豆苗) are often used for stir fried dishes in Asian cooking, but they are also great in soup. This healthy and nutritious soup takes little time to prepare, and it’s perfect for breakfast.

Miso Soup with Pea Sprouts and Eggs

Ingredients
- 4 cups Dashi
- 4 cups pea sprouts trimmed and washed
- 2 eggs
- 4 tbsp miso paste
Instructions
- Make the Dashi broth according to the recipe (or use instant dashi packet) and bring to a boil.
- Add the pea sprouts and bring back to the boil. Beat the eggs and slowly add to the soup. Cook for 1 minute and turn off the heat. Dissolve the miso paste.
