Today’s miso soup features pork and white button mushrooms. Use ordinary white mushrooms that can be found at any local store. While they don’t have as strong a flavor as shiitake mushrooms, not everyone always wants distinct mushroom flavors in their miso soup. White button mushrooms have just enough umami flavor for everyday soup. Pork adds more savory flavor, but you can substitute with tofu or other vegetables if you prefer a milder taste. Miso Soup with Pork and Mushrooms

- 1 Yukihira pot or any medium size pot
Ingredients
- 2 green onions
- 4 oz pork, thinly sliced
- 4 button mushrooms
- 2 tsp oil
- 4 cups water
- 4 Tbsp miso paste
Instructions
- Thinly slice green onions. Cut pork into bite-sized pieces. Thinly slice mushrooms.
- Heat oil in a pot, add pork, and cook until it turns color. Add mushrooms and cook until tender. Add water and let boil for a couple of minutes. Remove scum that comes up to the surface. Dissolve miso paste in the soup and add green onions.
