Today’s miso soup is made with baby spinach, pork, and Shiitake mushrooms. Pork and Shiitake mushrooms give extra Umami savory flavors and make this soup extra delicious. And spinach adds great nutrition with vitamins, iron, potassium, and lots of fiber. Don’t cook too long, and enjoy the full benefit of the goodness of the super vegetable!
We used an instant Dashi packet to make the fish broth here, but you can use any type of Dashi, Katsuo bonito flake Dashi or Kombu Dashi. Please check Back to Basics: How to Make Dashi to learn more about different types of Dashi.
Miso Soup with Spinach, Pork and Shiitake

Ingredients
- 4 cups Dashi
- 6 Shiitake mushrooms
- 4 oz pork thinly sliced
- 4 Tbsp Miso paste
- 2 cups baby spinach
Instructions
- Make Dashi using an instant Dashi packet. Or make broth according to our Dashi recipe.
- Remove stems and cut Shiitake mushrooms thinly. Cut sliced pork thinly.
- Add Shiitake and pork to the Dashi broth and cook for a couple of minutes.
- Dissolve Miso Paste in the Dashi broth. Add baby spinach in the end and cook for a minute. Serve immediately.
