Renkon Hasamiyaki is ginger flavored ground chicken mixture sandwiched with lotus root slices, then cooked in sweet and salty sauce. It is easy to make, and rather home cooking than restaurant food. This strongly seasoned dish is perfect accompaniment for Steamed Rice.
Renkon root is a root vegetable with long holes that run vertically, and there are round holes when sliced. Renkon is used in many Japanese dishes like Nomino (cooked vegetables), pickles, and even fried chips. Renkon has different textures depending on how it’s cooked. When it is rightly cooked, it’s crunchy texture from the fiber. When boiled, like in Chikuzenni, it has hard potato like mouth feel. When grated and cooked, it becomes chewy and Mochi like. In this dish, you can enjoy more crunchy texture than potatoey or chewy ones. You may have to go to Japanese or Asian markets to find Renkon in the US. If you can’t find Renkon, you could substitute with other vegetable like eggplants.
The sauce for Renkon Hasamiyaki is similar to Teriyaki sauce, but the ginger flavor from the ground chicken mixture make the whole taste a little spicy and refreshing. The ground pork or even finely chopped shrimp could be substituted if you like. Customize the dish with what you can find easily and your likings.

- Peel lotus root, and slice 1/4″ thick. You will be able to get 8-12 slices.
- Chop green onions.
- Put green onions, chicken, ginger, salt, Soy Sauce, and potato starch in a bowl, and mix very well.
- Sprinkle potato starch (not in the ingredient list) over one side of each lotus root slice.
- Divide the meat mixture into 4-6 parts, depending on how many lotus root slices you have. Put one part of the meat on a starch side of lotus root. Then cover with another lotus root slice so the starch side touches the meat. Trim the sides of the meat with a knife so the meat is neatly inside the sandwiches.
- Heat oil at medium heat in a frying pan. Cook for 3-4 minutes. Turn over, turn down the heat, cover, and cook another 3-4 minutes.
- Meanwhile, in a small bowl, mix the ingredients for the sauce until sugar dissolves.
- Add the sauce mixture to the pan. Cook for a few minutes coating the sauce on both sides.
