Simmered Sweet Potato and Apple is a perfect fall side dish when Satsumaimo (Japanese sweet potato) is in season. Japanese sweet potato and apple are simmered in a simple syrup with a bit of lemon juice. It is easy to make with only 4 ingredients.

Simmered Sweet Potato and Apple
Simmered Japanese Sweet Potato (Satsumaimo) and Apple with lemon juice
Ingredients
- 1 Japanese Sweet Potato
- 1 apple
- 3 tbsp sugar
- 1 tbsp lemon juice
- 1 1/2 cup water
Instructions
- Cut the sweet potato into 1″ thick rounds. Soak in water for 5 minutes.
- Cut the apple vertically into quarters and cut away seeds and core. Cut into smaller pieces.
- In a pot put the potato, apple, and add water to cover. Add the sugar and lemon juice. Cover with the parchment paper and cook at medium heat to bring to a boil. Turn down the heat and simmer for 20 minutes.
