Strawberry and Milk Kakigori

Kakigori (かき氷) is shaved ice with flavored syrup like strawberry, lemon, melon, and simple syrup (sugar syrup).  It is very popular during the hot and humid summer in Japan, and there are a lot of pop up Kakigori stores appearing in the season.  Strawberry Kakigori is one of the most favorite flavors of all time.  Kakigori is most likely made with bottled syrup, but home-made strawberry syrup is prepared easily at home, and, we have to say, it is so much better than store-bought one!  The strawberry taste that is extracted from frozen strawberries is surprisingly rich and strong. And of course, there are no artificial colors or flavors at all!

You can get shaved ice here in the states, too, usually as a snow cone; however, Kakigori is very different from that.  Snow cones often use crushed ice or ice shaved in thicker pieces.  Japanese shaved ice is soft and fluffy, and melts in your mouth like newly fallen snow.  It doesn’t have much crunchy texture at all.  A lot of the time, Kakigori is a pretty simple affair, ice and syrup of your choice, with or without condensed milk on top, although you can add some fruit toppings for fun.  If you like more traditional Japanese flavored Kakigori, try our original Kakigori with Matcha syrup and Anko.

The hardest part to make this dessert is finding a Kakigori machine.  If you are lucky to find it at Japanese stores or online, get it, and make this!  Kakigori is a fun and cool treat to please your friends and family in summer!

Strawberry and Milk Kakigori Recipe

Ingredients

  • 1 lb frozen strawberries
  • 1 cup sugar 200g
  • 1 Tbsp lemon juice
  • ice
  • condensed milk

Instructions

  • In a pot, add strawberries, sugar, and lemon juice. Cook at medium heat stirring often until boiling. Continue cooking about 3 minutes longer, and strain. Keep liquid only, and let it cool completely. (Strawberry chunks can be eaten separately as a ice cream or pancake topping.)
  • Shave ice into a bowl to make a tall mound of shaved ice, according to the instructions of Kakigori machine.
  • Pour 3-4 Tbsp of the strawberry syrup over the ice and drizzle condensed milk on top. Serve immediately.
