Suiton Soup is hot soup with soft dumplings simply made from flour and water. Suiton is almost always eaten at home not at restaurants. Our easy homemade Suiton with a lot of vegetables is so warm and filling. It is a perfect soup during the cold seasons.
Suiton is said to be widely eaten in Japan, or a dish similar to this one, from the 1800s. During WWII, the dumplings became an alternative food to rice because of shortages of food overall. Back then other flours like soybean and corn were used instead of wheat flour, which was also scarce.
The soup varies vastly depending on region and each household today. Some dumplings are hard enough to form by hands, and their texture is closer to noodles and pastas, as opposed to a soft and sticky batter which needs to be spooned into the soup. Some soup is seasoned with Soy Sauce, and others with Miso Paste. You can use any kind of meat, like thinly sliced pork or chicken, or go without meat too. Suiton Soup often uses root vegetables like Daikon radish, carrots, and Gobo burdock roots, but leafy greens like spinach can also be included for more nutrition too.
We added grated Nanaimo yam to the Suiton Dumplings to give a little softer and chewier texture, but that can be omitted if you don’t have it or prefer that way. Suiton Soup is rather filling because of dumplings, and it can be a light meal by itself. It is very simple to make, so make extra for the next day. Dumplings in the soup will be soggy and fall apart a bit, but that’s also good since they absorb great Umami flavor from the soup. Try this for a taste of winter home cooking!
Suiton Soup (Flour Dumpling) Recipe

Ingredients
Suiton Dumpling
- 1/2 Cup flour
- 2 Tbsp potato starch
- 1 Tbsp Nagaimo long yam grated
- 1/2 Cup water
Instructions
- Peel carrot and cut in half vertically, then thinly slice into half rounds. Peel Daikon and cut into quarters. Slice thinly. Slice Gobo root diagonally thinly. Soak Gobo in water for 5 minutes. Cut white long onion into 1/2” (1.2 cm) length pieces. Cut chicken into small pieces.
- In a medium pot, heat Dashi to a boil and add chicken and all the vegetables except the green part of the onion. Cook at medium heat until vegetables get tender, about 5 minutes. Then season with Soy Sauce, Sake, and salt.
- In a medium bowl, add all the ingredients for dumplings and whisk together well.
- Drop spoonfuls of dumpling batter into the soup, and cook covered for 5 minutes. Add green parts of onion at the end and stir. Serve immediately.
