Strawberry is the fruit of spring in Japan, the same as in many places throughout the world. And Japanese people take it seriously with strawberries. Seasonal foods, fruits, vegetables, seafood, etc., are very important for their everyday life there. Because there is an abundance of a particular food in a short period of time during the year, they celebrate with it well. When strawberries are in season, we eat them fresh as well as make them into special dishes. Strawberry Mousse is a super easy dessert to make at home, and it is great spring sweet after meals.

Mango Purin (pudding) is a mango-flavored cold jellied dessert, now quite popular in Japan.  It is called Purin (or pudding), though it often doesn’t use eggs, and it’s not baked or steamed.  It is made of gelatin and chilled.  It has a creamy taste from milk and cream, and that may be the reason it’s called “pudding.”  It is originally from Hong Kong, and it became popular enough to spread all over the world.  Mango Purin is often seen at Chinese restaurants in the US, but not very common anywhere else.  However, Mango Purin is more well known in Japan, and you can buy it at a lot of cake shops and other stores like supermarkets and convenience stores.

Souffle Cheesecake is a popular cheesecake sold at western-style dessert shops in Japan.  As you can guess from the name, it is a light and airy soufflé-like dessert as opposed to dense and thick American cheesecake.  Soufflé Cheesecake is not overly sweet, as with other Japanese cakes, but it still has a good enough cheese flavor to be called a cheesecake.

Grapefruit Jelly in a cup made of fruit skin is a popular dessert during the hot summer in Japan.  It is sweet and tart, refreshing, and also a very healthy treat that you can easily make at home.  Making the cup out of grapefruit gives a special touch to this cold dessert, and can bring an extra smile for your family and friends.

Kakigori (かき氷) is shaved ice with flavored syrup like strawberry, lemon, melon, and simple syrup (sugar syrup).  It is very popular during the hot and humid summer in Japan, and there are a lot of pop up Kakigori stores appearing in the season.  Strawberry Kakigori is one of the most favorite flavors of all time.  Kakigori is most likely made with bottled syrup, but home-made strawberry syrup is prepared easily at home, and, we have to say, it is so much better than store-bought one!  The strawberry taste that is extracted from frozen strawberries is surprisingly rich and strong. And of course, there are no artificial colors or flavors at all!

Kakigori (かき氷) is Japanese shaved ice with flavored syrup.  It is very popular during the hot and humid summer in Japan, and there are a lot of pop up Kakigori stores appearing in the season.

Although you can get shaved ice here too, usually as a snow cone in the US, Kakigori is very different from that.  Snow cones often use crushed ice or ice shaved in thicker pieces.  Japanese shaved ice is very soft and fluffy, and melts in your mouth like newly fallen snow.  It doesn’t have much crunchy texture at all. Hawaii also has a version called “shave ice” that is becoming popular in other states as well. It’s based on and very similar to Japanese Kakigori, but some of the flavorings are different.
