Today’s miso soup is made with Egg and Tomato. It may look like a little unusual combination, but it’s delicious! Cook tomatoes long enough so that their tasty flavor seeps into the soup, and their sourness also softens. Eggs should not be cooked too long. Enjoy a fluffy soft texture just like egg drop soup.
Tamagoyaki is a popular Japanese rolled omelette that is commonly eaten for breakfast or packed in bento lunch. You can make a plain Tamagoyaki or mix in many different ingredients for flavor variation. Today, we added a canned tuna and chopped green onions. An entire can of tuna (in water) can be added directly in the egg mixture, which will make it almost like Dashi. It’s packed with umami and quite satisfying with added protein. If you do not have a Tamagoyaki pan, you can simply make this into a regular omelette in a frying pan. It’s so simple to make with easy to find ingredients.
Ajitama (味玉) is boiled eggs marinaded in a sauce.  Ajitama is actually a short name for Ajitsuke Tamago which means seasoned eggs.  It is great as is, but it can be a topping for Ramen, salad, and rice bowl dishes.
Fried eggs or sunny side up are widely eaten all over the world. It is a national food of every country. It is easy and cheap to make, nutritious, and dependably delicious. It varies by seasonings and what to be eaten with, but the basic taste is the same. In Japan, we often eat fried egg and ham cooked together. The addition of saltiness and extra protein from the ham make a simple fried egg taste better and heartier.
Tamagoyaki Sandwich is a popular choice for Japanese Bento lunch. Tamagoyaki, pan-fried egg, is a quick but delicious filling for sandwiches. Just make some eggs into a thick frittata-like shape, which takes no time, sandwich the eggs with bread slices, and that’s it. Oh – don’t forget to spread some Japanese mayo and Karashi hot mustard. That’s the key taste of this dish. Tangy Japanese mayonnaise and spicy mustard go very well with mild flavored cooked eggs. Tamago Tofu (Tamagodofu) is savory egg flan similar to Chawanmushi. Even though it’s called Tofu, it is not made from soy beans. It is really more like custard. Tamago Tofu is simply flavored with salt, Mirin, and Dashi fish stock. This subtle and comforting dish is usually eaten chilled, especially in warm seasons. If you don’t have any appetite from the heat outside, this can be an easy dish to enjoy. It feels great going down on a hot summer day. However, hot Tamago Tofu is also good just like Chawanmushi.
Tamagoyaki is thin layers of eggs cooked and rolled into a log using a special rectangular Tamagoyaki pan. This neatly shaped Japanese omelette is a great side dish for any meal, but it is an especially wonderful addition to a Bento lunch since it’s good cold. You can mix in different flavors and ingredients to regular Tamagoyaki so that you don’t get tired of the same old taste (well, is that possible?). Here we added Benishoga, pickled red ginger, to one version to give a little spiciness and sourness. In another one, cooked spinach, was added to give a nice green color and extra nutritions. You can also try chopped ham, Aonori (dried green seaweed), or any meats and vegetables you like for variations. Play with it, and create your own original Tamagoyaki!

Dashimaki Tamago is rolled pan fried eggs just like Tamagoyaki (rolled omelette). The cooking and rolling technique to make Dashimaki is exactly the same as Tamagoyaki, but the ingredients and flavor are a little different.
