Pork Shabu Shabu Salad is a perfect dish for a hot summer dinner.  It is easy to cook with a minimal amount of cooking time using heat, and you can cook ahead earlier in the day when it’s not so hot.

Shabu Shabu is a Japanese hot pot dish (Nabemono), with paper-thin sliced beef.   It is cooked at the dinner table using a portable gas stove and we eat it as we cook.  For this dish though we used sliced pork, and made it into cold salad.  If you prefer, you may use sliced beef too.  You can also add or replace different vegetables such as Daikon sprouts, lettuce, and cucumber.


Miso Dressing is a tasty Miso based dressing great for salads, simple boiled vegetables (as in the recipe), and even cooked meat.  This salty sweet dressing tastes quite different from western dressings, but you’ll like it if you like the flavor of Miso.

You can use either white or Awase (between red and white) Miso for the dressing.  Red Miso may have too strong of a flavor for this dressing.  A key flavor of the dressing other than Miso is sugar.  We think a bit on the sweet side tastes better, but you can decide how much sugar you would like to use.  Depending on what kind of Miso you choose, you may have to adjust the amount of sugar.  White Miso is much sweeter, so beware.


Carrot Ginger Dressing is the dressing used in many Japanese restaurants in the US.  The more American the restaurants are, the more likely they use this dressing for their salad, it seems.  We have never seen the Carrot Ginger dressing in restaurants in Japan, so this must be an American thing. Where this originally came from is a little unclear, but it is said that some Japanese steak house restaurants started serving or something.  Even though this may not be very authentic Japanese food, still the bright orange dressing is quite tasty and we would like to include it in our Japanese recipes.

Sesame Sauce is a very convenient seasoning for vegetables.  It is quick and easy to make. Then just mix with your favorite steamed or boiled veggies.  It is also very healthy because there is no added fat or oil in it.   When you eat salads, a lot of the time, the dressing is the problem for healthy eating.

Broccoli is one of the super vegetables, and you would like to eat a lot, but maybe not plain.  Instead of cheese or butter, use this Sesame Sauce, and it doesn’t add very much calories.

Celery is not really an ingredient for Japanese cuisine.  It has a strong flavor and may not be able to be used in all Japanese dishes; however, that doesn’t mean we can’t use it at all.

I made Celery into Sunomono Salad, and it tastes great.  Refreshing celery and sweet vinegar go very well together.  A little bit of sesame oil enhances the flavor as a whole.

Hiyayakko is a cold tofu salad with some toppings and soy sauce.  It is fresh and cold, and perfect for hot summer.

If you live in Japan, you can buy tofu from supermarkets, but also from tofu shops in almost any town (is that still true?.. I hope) where they make fresh hand-made tofu daily.  Fresh tofu has a stronger soy bean flavor than packaged tofu you can buy in the US, and it almost doesn’t need any more flavoring.   When you eat uncooked tofu like Hiyayakko, you want to have that kind of quality tofu.  However, it is almost impossible to get outside Japan unfortunately.
