Tamago Sando (卵サンド) is a Japanese version of an egg salad sandwich. Finely chopped hard boiled eggs are mixed with tangy Japanese mayonnaise and sandwiched with fluffy white Shokupan Bread. Tamago Sando has always been a popular kind of sandwich in Japan as long as we can remember, but in the more recent craze, it’s surfaced on social media often and gets a lot of attention for the strikingly scrumptious look of the rich overstuffed sandwich. Tamago Sando is so easily made by anybody with or without cooking skills, so you can actually make and eat the delicious dish at home rather than looking at pictures.
Tamago Sando is literally Egg Sandwich, and it doesn’t have to be egg salad as filling to be exact. It could be Tamagoyaki cooked egg or any form of eggs. However, if you order Tamago Sando in Japan, you most likely will get this egg salad sandwich. Tamago Sando is sold at bakeries, supermarkets, and of course convenience stores all over the country. Please make no mistake imagining sandwiches sold at convenience stores in the US. The Tamago Sando you can get 24/7 in Japan are good. They are not only Japanese people’s but also foreign tourists’ favorite. Perfectly seasoned gooey filling and fluffy bread literally melt in your mouth. If you’re lucky enough to be able to visit, you have to try it.
A lot of cafes or Kissaten restaurants offer Tamago Sando too. Each shop has their own style of the sandwich, which can be inspiring for how to make your own too. Some shops’ boiled eggs are chopped coarsely, others are more finely chopped. Eggs could be hard boiled or soft, drenched with mayo or not, unreasonably overstuffed or beautifully presented… Depending on where you go, you get 100 different Tamago Sando. What we made here is pretty much in the middle of the road, one everyone would love. But you can of course alter the way you like. One tip to keep is to spread butter on the bread. That makes the sandwich taste like the Japanese ones. Another one is to use Japanese Shokupan bread. Or the softest white bread you can find. Ingredients
- 4 eggs
- 4 Tbsp Japanese mayonnaise
- salt and pepper to taste
- 4 slices Shoku Pan Japanese toast bread
- butter room temperature
Instructions
- Cook eggs in boiling water for 10 minutes. Remove from water, and cool under running water. Peel shells.
- Chop eggs coarsely with a knife. Put eggs in a medium bowl, add mayo, and mash with a fork. Add salt and pepper to taste.
- Spread butter thinly on Shoku Pan.
- Take half of the egg salad and put on a slice of Shoku Pan. Cover with another slice and push gently. Cut off the crusts, and then cut diagonally to make 2 triangles.
