Tamago Zosui (卵雑炊) is rice porridge or risotto cooked with eggs. This mild tasting simple food is great at any time, but especially good when having no appetite or trying to avoid heavy foods.
Zosui is often made after eating Nabemono hot pot using the flavorful leftover broth seasoned with soy sauce and sake with rice, and that’s the end of the meal. That’s the easiest time to make it, but you can also cook this Tamago Zosui itself easily when you use instant Dashi or Dashi packet. Because there are no vegetables or meat in the dish, only rice and egg, it can be cooked very fast. You can make Tamago Zosui at a moment’s notice.

Ingredients
- 2 cups Dashi any kind
- 1/2 tsp salt
- 2 tsp Soy Sauce
- 2 tsp Sake
- 1 cup Steamed Rice
- 2 eggs
- 1 green onion chopped
Instructions
- Cook Dashi, salt, Soy Sauce, and Sake together in a pot at medium heat. When the soup starts boiling, add rice. Cook for 5-10 minutes until reaching your desired thickness.
- Beat eggs in a bowl, slowly pour into the rice, and stir.
- Top with chopped green onion.
