Hojicha Shortbread Cookies

Shortbread cookies infused with Hojicha, Japanese roasted green tea.

Ingredients

  • 1/2 cup powdered sugar
  • 2 tbsp Hojicha tea (loose tea leaves)
  • 1 cup salted butter (softened at room temperature)
  • 2 cups all purpose flour

Instructions 

  • Combine powdered sugar and hojicha in a small food processor or blender, and grind together finely.
  • Cream the butter with an electric mixer until smooth. Add the powdered sugar and hojicha, and mix well. Add the flour and mix until the dough comes together. Wrap the dough in plastic and shape into a log about 2 inches in diameter. Refrigerate the dough for at least 30 minutes or until firm.
  • Preheat the oven at 350°F. Cut the chilled dough into rounds about 1/4 - 1/3 inch thick. Place them on a baking sheet lined with a parchment paper and bake for 12 to 15 minutes until edges are lightly browned. Let cool on the baking sheet.
