Broccoli with Silky Pork Sauce

Steamed broccoli drizzled in a savory, silky sauce with ground pork

Ingredients

  • 1 head broccoli
  • 1 pinch salt
  • 2 tsp grated ginger root
  • 1 1/2 Tbsp Katakuriko (potato starch)
  • 3 Tbsp water
  • 1 tsp oil
  • 7 oz ground pork
  • 1 cup Dashi
  • 1/2 Tbsp sugar
  • 1 1/2 Tbsp soy sauce

Instructions 

  • Make a cup of Dashi. Cut broccoli into small florets. Peel and finely grate ginger root. Mix Katakuriko starch and water in a small bowl. Set all aside.
  • Bring water to a boil in a pot, add broccoli and a pinch of salt, and cook covered for 2-3 minutes. Strain well and keep covered.
  • In a frying pan, heat oil over medium heat, add ground pork, and cook until browned. Add Dashi, sugar, and soy sauce. Stir the starch mixture, and add it to the sauce, stirring constantly to avoid lumps. When the sauce is thickened, add ginger, and let it boil for a minute.
  • Plate broccoli florets in a serving bowl, and pour the pork sauce over. Serve immediately.
