Mentaiko Potato Salad

Ingredients

Instructions 

  • Chop green onion finely. Cut open skin of Mentaiko and take roe out. Discard the skin.
  • Cut potatoes into quarters. Cook in boiling water until tender.
  • While still hot, peel potatoes and mash with a potato masher. Add Mentaiko roe and mix. Then add green onion and mayo and mix well. Top with Nori seaweed.
