Miso Soup with Shrimp

Miso soup made with head-on shirmp and green onions.

Ingredients

  • 2 green onions
  • 8 shrimp, head-on, shell-on
  • 4 cups water
  • 4 tbsp miso paste

Instructions 

  • Cut green onions finely.
  • Cut the shrimp in half to separate the head and body. Make a shallow slit on the body to remove the vein.
  • Heat a pot, and cook the shrimp (heads and bodies) for 5 minutes until both sides are slightly browned.
  • Add the water to the pot and bring to a boil. Remove scum from the surface. Reduce the heat and boil for 3 minutes.
  • Dissolve the miso paste and add green onions.
