Hire Katsu is a kind of Tonkatsu pork cutlet using a different cut of pork, tenderloin. Hire (“hee-ray”) means Fillet in Japanese, and smaller tenderloin fillet pieces are breaded and deep-fried to make this dish. Hire Katsu is very tender bite-size fried pork, and it is a popular item at Tonkatsu restaurants in Japan.
Hire Katsu is less fatty than regular Tonkatsu using pork loin with a layer of fat. So you can say that it is a somewhat healthier version of Tonkatsu. Pork tenderloin is a more expensive cut of pork, but it is nothing like beef tenderloin. If you make it at home especially, Hire Katsu is a tasty but reasonable dinner entree. Once the meat is breaded, it can be kept in the freezer for another time. Then deep-fry without thawing.
Hire Katsu is most often eaten with Tonkatsu sauce. Japanese hot mustard is also a good accompaniment for it. If you like Katsu to be a little less greasy, you can top with grated Daikon radish and Soy Sauce instead of Tonkatsu sauce. However you serve Hire Katsu, it is so delicious that everybody would love it. Try it for your next dinner!
