Simple Japanese-style omelette filled with ground meat and onion.
Filling
- 1 tsp oil
- 6 oz ground beef
- 1/2 onion (finely chopped)
- 2 tsp soy sauce
- 1 tsp mirin
- salt and pepper (to taste)
Heat the oil in a frying pan at medium high heat, and cook the ground beef until browned. Add the chopped onion and cook for a few minutes until onion is cooked. Season with the soy sauce and mirin. Add the salt and pepper to taste if needed. Turn off the heat.
Beat the eggs in a small bowl and season with the salt. Heat a small frying pan with the oil at medium high heat, and pour 1/2 of the eggs. Gently stir the eggs and turn down the heat to medium low. When it begins to set, place half of the meat filling in the center. Fold the omelette in half using a spatula. Repeat to make the second omelette. Top with the ketchup (optional).
