Meatloaf Wreath with Eggs

A festive twist on classic meatloaf, baked in a ring mold with boiled eggs hidden inside.

Ingredients

  • 1/2 brown onion
  • 1 clove garlic
  • 1 tsp oil
  • 1/2 cup panko (bread crumbs)
  • 1/4 cup milk
  • 1/4 cup parsley (chopped)
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 egg
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp Worcestershire sauce
  • 4 boiled eggs

Sauce

  • 1/2 cup ketchup
  • 2 Tbsp brown sugar
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp soy sauce

Garnish

  • mashed potatoes or vegetable pilaf
  • broccoli (blanched)
  • cherry tomatoes (halved)
  • yellow pepper (cut into fun shapes)

Instructions 

  • Preheat the oven to 350°F (180°C). Chop brown onion and garlic finely. Heat a frying pan with oil, and cook garlic until aromatic. Then add onion and cook until soft but not browned. Let the mixture cool.
  • Meanwhile, combine panko bread crumbs and milk in a medium bowl and set aside. Chop parsley finely.
  • In a large bowl, put beef and pork ground meat, egg, salt, pepper, and Worcestershire sauce. Then add cooled onion, bread crumbs, and chopped parsley, and mix very well.
  • Oil a ring-shaped mold, and pack 1/2 of the meat mixture. Place boiled eggs at equal intervals. Pack the rest of the meat. Bake for 50-60 minutes until cooked through.
  • Take it out of the oven and let it rest for 10 minutes. Pour the juice from the meatloaf into a saucepan. Add the ingredients for the sauce, and cook and reduce for a couple of minutes.
  • Carefully unmold the meatloaf, and pour the sauce over it. Garnish with vegetables and potatoes or rice as desired.
