Very soft boiled eggs, a great topping for rice bowl dishes, salads, and many more

Equipment

  • 1 heavy pot with lid, medium size

Ingredients

  • 4 cups boiling water
  • 3/4 cup water, room temperature
  • 4 eggs, cold
  • Mentsuyu (optional for topping)

Instructions 

  • Boil water in a heavy pot. Remove the pot from the heat and carefully add room temperature water and the eggs. Cover the pot and let the eggs sit in the hot water for 15 minutes without opening the lid. After 15 minutes, remove the eggs from the hot water and use them according torecipes.
