What’s Milk Tea Kakigori
Kakigori has a surprisingly long history in Japan. It even appears in The Pillow Book, a classic essay from the Heian period (794–1185), where shaved ice drizzled with sweet syrup was described as a rare luxury — one only the nobility could enjoy, thanks to ice preserved in special underground storehouses. Over the centuries it became a beloved summer staple for everyone, settling comfortably into its reputation as a festive treat for kids on hot summer days.
That image started to shift in the late 2000s. In 2007, a shop called Himitsudo opened in Tokyo’s Yanaka neighborhood, serving Kakigori made with natural ice and house-made syrups — and it quickly caught the attention of the media, and social media did the rest, spreading the excitement far and wide. The range of flavors expanded just as quickly. Where Kakigori syrups were once almost exclusively basic fruit flavors like strawberry or melon, shops began experimenting with fresh fruit syrups, dessert-inspired flavors like tiramisu, and whipped cream toppings — giving rise to an entirely new generation of Kakigori.

The Boba boom played its part too, bringing heavily sweetened milk tea firmly into Japanese snack and café culture. Milk tea had always been on coffee shop menus, but the bold, sweet style suddenly felt right at home — and that opened the door for Milk Tea Kakigori. Decorative Kakigori topped with whipped cream or espuma has become a defining trend, and premium versions at hotel lounges now regularly run 3,000 to 5,000 yen a cup. Milk Tea Syrup
- 1/2 cup water
- 2 tbsp black tea (loose tea leaves) (such as Assam, Darjeeling, English Breakfast)
- 1/2 cup milk
- 2 tbsp sugar
Sweet Cream Cold Foam
- 1/4 cup heavy cream
- 2 tbsp condensed milk
Shaved Ice

Instructions
Milk Tea Syrup
- In a small pot, bring the water to a boil and add the tea leaves. Cover and simmer for 5 minutes.
- Add the milk and heat until warm, then strain out the tea leaves and stir in the sugar until dissolved. Refrigerate until chilled.
Sweet Cream Cold Foam
- Combine the heavy cream and condensed milk in a bowl. Whisk until soft peaks form.
Shaved Ice
- Prepare the shaved ice using a shaved ice maker.
- Pour the chilled milk tea syrup over the ice. Top with the sweet cream cold foam and serve immediately.
